Tuesday's Food Tip

Tea Time Tip: If you love tea but it sometimes seems too weak, maybe you aren't steeping it long enough. Different teas require different steeping times. Follow this general guide for better tea -

Green Tea: Steep for about 3 minutes

Oolong Tea: Steep about 3 to 5 minutes

Black Tea: Steep for about 5 minutes

Herbal Infusions: Steep for 5 minutes

Monday's Food Tip

Today's food tip is easy. If you love flavored coffees but don't have any on hand, just add about 1/2 tsp. of ground cinnamon to the coffee grounds before brewing a pot of coffee. You'll notice a subtle taste of cinnamon. It won't overpower the coffee or make it bitter.

Sunday's Food Tip

Having a picnic or barbeque this holiday weekend? Then try these tips when grilling steaks.

Let raw steaks sit for 30 to 35 minutes before you put them on the grill so they reach room temperature. The cooked steaks will have a better texture and better taste. When grilling the steaks, test for doneness by touching them. The softer the steak, the less cooked it is.

Here is Susan's tip:

I like to use fresh herbs--there is just no comparison with the flavor burst you get from the real deal--but they are definitely expensive if you don't grow your own. So often I got frustrated by my inability to use it all before I'd open the crisper to find the brown, slimy remains! When I invest in a fresh bunch of something--parsley, cilantro, tarragon, etc.--I try to wash all of it that I'm not using right away and dry thoroughly. Then I seal it in a plastic freezer bag, being careful to squeeze out every bit of air that I can. Frozen tastes almost as good as fresh. Just be sure to label the bag--it's hard to identify miscellaneous frozen green stuff!

Hate to grate cheese because so much of it gets stuck in the holes of the grater? Then try this: after grating all the cheese you need, grate a piece of raw potato and see how it "cleans" out the holes of the grater.

Thursday's Food Tip

If a recipe calls for squares of baking chocolate and you don't have any on hand, try this instead: use 3/4 cup unsweetened cocoa and 1/4 cup Crisco. This equals 4 (1 oz. each) squares of baking chocolate.

It’s easy to remove the core from a head of lettuce. Simply hit the core solidly on a countertop. The core will separate from the head and you can remove it with a twist, then pull it out.

Tuesday's Food Tip

It’s easy to make your own croutons for salads or soups. Simply cut stale (day-old or so) bread into small cubes. Saute the cubes in a little olive oil and butter over medium heat for about five minutes, tossing frequently so the cubes become toasted and golden on all sides.

If you need to cut thin strips of raw meat for stirfry, or other dishes, the meat will be easier to cut if it is partially frozen.

Take frozen meat from the freezer and cut before it has completely thawed, or place fresh meat in the freezer for about 30 minutes to firm up the meat, making it easier to slice.

Saturday's Food Tip

To plump up dried fruit (like raisins or currants) before adding them to the batter for muffins, scones, or tea bread, put the fruit in a separate bowl. Pour boiling water over the fruit and let it absorb the water for about 4 or 5 minutes. Strain, then add the "plumped up" fruit to the batter and bake as directed.

Friday's Food Tip

Here's a tip for storing a large supply of fresh berries:

Wash and dry the berries. Place them in a single layer on a baking pan and lightly cover the pan with foil or plastic wrap, then put the pan in the freezer. Once the berries have frozen, remove them from the pan and place them in plastic freezer bags and seal the bags. The berries will keep in the freezer this way for up to a year, and they won’t get crushed.

Thursday's Food Tip

Chocolate squares (or chopped chocolate or even chocolate chips) are easily melted in the microwave. Place the chocolate in a microwaveable bowl and microwave on high for 1 minute. Stir. Repeat this process in 30-second intervals until the chocolate has completely melted and has a smooth creamy consistency.

Don't refrigerate tomatoes that are less than ripe. The cold temperatures will stop the ripening process and prevent the flavor from fully developing. Store tomatoes on the counter until they ripen, then they can be kept in the refrigerator for a few days.
