A Dilly of a Rub!

Divine Dill Dip Mix from the Three Angels Gourmet Co. makes a great dry rub for chicken breasts.

Flatten boneless chicken breasts with a meat mallet. Sprinkle dry dill dip mix over both sides of each chicken breast and rub the dip mix into the meat. Cover chicken breasts with plastic wrap or waxed paper and place in the refrigerator for 30 minutes or more.

Remove chicken breasts from the refrigerator. Cook the chicken in a skillet with a little olive oil.

A Simple Backyard Picnic

Here's an easy and fun way to keep your kids entertained this weekend. Let them plan a simple backyard picnic for their friends OR older children might want to plan a picnic for their younger siblings and their friends. Either way, all you have to do is supervise. The kids create the invitations, they make all the food, they set up the picnic.

The Invitations

Let the kids create something fun on the computer or simply fold colored sheets of construction paper in half and print out the invitations with a marker. No need to mail the invitations. Just have the kids deliver them to their friends' front doors.


The Menu

Let your children make simple foods that all kids love. You'll have to supervise, but even 8-10 year-olds should be able to make most of these foods themselves.

PB& J sandwiches or simple bologna and cheese sandwiches can be made more interesting if cookie cutters are used to create interesting shapes out of the bread, cheese, and bologna. Stars, hearts, teddy bears - all sorts of cookie cutter shapes can result in a variety of cute sandwiches.

Baby carrots with a little disposable ketchup cup for dipping add a fun and yummy touch to the picnic or have the children fill celery sticks with peanut butter and top with raisins (for, the ever popular, "ants on a log").

Chop up fresh fruit and let your children thread it on wooden skewers (after the skewers are filled, snip off the pointed tips for safety). Apple slices, banana chunks, strawberries, and pineapple are good choices for fruit kabobs. You can also add a few cheese chunks for color and flavor.

165031_camping_setHave them pack all the food into plastic containers with lids. Give them plastic tableware and paper plates and cups for the picnic. If you have a large picnic hamper with plastic dishes and tableware, the kids can load it up with all the makings for the picnic and take it out to the backyard. But a large cardboard box can serve as a picnic hamper, too.

Homemade lemonade is a great beverage for picnics and your kids will be proud to tell their friends they made it themselves. Here is a simple recipe.

Dessert can be homemade cookies or fruit pops (fruit juice frozen in paper cups, with a popsicle stick in each pop) or even a big slice of watermelon.


The Set Up

If you have a picnic table in the backyard give your kids a colorful old blanket or bedspread to use as a tablecloth. Let them pick fresh flowers or herbs from the garden and place them in a canning jar or jelly jar to create a fragrant and attractive centerpiece.

If you don't have a table, kids can just spread the blanket or bedspread on the ground, and unload the hamper and arrange the containers of food on the blanket.


That's it. After eating, the children will probably want to play games. Older kids might choose to just sit and talk with their friends while you relax nearby in a lawn chair with an iced cold glass of lemonade!

Insalata Caprese

Since this is one of my favorite dishes in summer, I just HAVE to share it again.

Easy Insalata Caprese

It's tomato time! And, if you're a gardener, you might be wondering what you can do with all those luscious tomatoes growing in your backyard right now. One of the easiest, yet most delicious, dishes to enjoy at the height of summer, when tomatoes are plentiful, is Insalata Caprese (named for the Island of Capri, Italy). The secret to this delightful dish is using only the freshest ingredients.

When served with fresh bread and a glass of chilled white wine, Insalata Caprese makes the perfect summer lunch. Here’s all you need:

2 lbs. vine-ripened tomatoes that are red, juicy and flavorful and have never been refrigerated (Get them at your local farmer’s market if you don’t have your own backyard vegetable garden)

8 to 10 leaves of fragrant young basil (Again, check for basil at your farmer’s market if you don’t grow your own)

1 lb. good quality fresh, moist mozzarella (The best mozzarella for this dish is made from buffallo milk – mozzarella di bufala – but that’s hard to find, so cow’s milk mozzarella – mozzarella fior di latte – works well for this, too)

1/4 c. genuine extra-virgin olive oil

To make the salad:

Slice the fresh mozzarella and the tomatoes into rounds. Alternate slices of mozzarella and tomato on a platter (or individual salad plates), overlapping them for effect.

Tear the basil leaves into small pieces and sprinkle them over the slices of tomato and mozzarella.

Add salt and freshly ground pepper to taste. Just before serving, drizzle with olive oil.

That's it! I told you it was easy.

Cafe Mocha Shake

In the winter months I like to hang out at a cute little coffeeshop not far from my house. I sit there and write as I sip a cup of hot, soothing Cafe Mocha.

In the summer, when it's simply too hot to leave the house, I like to make this refreshing Cafe Mocha Shake at home.

CAFE MOCHA SHAKE

1 c. coffee with milk

2 tsp. chocolate syrup

1 1/2 c. coffee ice cream

Drizzle the chocolate syrup along the inside of a tall glass. Mix the coffee with milk and the ice cream until blended - I don't blend it completely because I like some "chunks" of ice cream in the shake that I can dish out with a spoon.

Pour the blended mixture into the chocolate lined glass. Serve with a straw and a spoon.

"Berry" Pretty Ice Cubes

For an unexpected and colorful garnish for iced tea, make these simple berry ice cubes. Put blueberries and raspberries into ice-cube trays. Fill with water and freeze.

Once the cubes have frozen, pop them out and put into iced tea glasses. Fill the glasses with iced tea. Add a colorful straw to each glass.

Make It Dill-icious!!!

8. Prepare the dill dip with sour cream; then serve with cooked salmon or as a tartar sauce for other fish.

9. Add a small can of drained, chopped water chestnuts to the dill dip made with sour cream.

10. Mix the dill dip with sour cream. Serve with hot wings or pretzels.

11. Use a little of the dry dill mixture to season homemade soups.

12. Mix the dry dill dip with softened cream cheese for a sandwich or bagel spread. Add crushed pineapple for a little tang, or chopped water chestnuts for a special crunch.

Variation: If you don't want to shape the cheese mixture into a ball just spoon it into an attractive bowl and serve with bagel chips or crackers.

SUN-BLESSED TOMATO HERB PUFFS


1 box puff pastry

1 pkg. Sun-Blessed Tomato Herb Dip Mix

8 oz. cream cheese, softened


Combine the tomato herb dip mix with the softened cream cheese and put it in the refrigerator for about an hour to blend. After an hour, remove the cream cheese mixture from the refrigerator. Let it soften while you preheat the oven and prepare the pastry.


Preheat the oven to 400 degrees.

Thaw 2 sheets of puff pastry.

When thawed, place one sheet of pastry on a lightly floured boad. Use a rolling pin to roll the dough out until it's a 13-inch square. Spread 1/2 of the cream cheese mixture over the entire surface of one sheet of the puff pastry. Fold the sides of the pastry toward the center - so they go halfway to the middle. Fold them again, this time so the 2 folds meet exactly at the middle of the dough. Then fold one half over the other. Slice the dough into 3/8 inch slices and place them, cut side up, on a baking sheet lined with a silicone baking mat. Repeat this entire procedure with the 2nd sheet of puff pastry.

Place each baking sheet in the oven for 6 minutes. Remove from the oven and turn each pastry slice over. Return baking sheet to the oven and continue baking for an additional 6 to 8 minutes - until each slice of pastry is done and the edges have started to brown.


MEDITERRANEAN ROLLUPS

1 pkg. Three Angels Sun-Blessed Tomato Herb Dip Mix
1 small can chopped black olives
1 small pkg. cream cheese
4 flour tortillas

Mix softened cream cheese and Sun-Blessed Tomato Herb Dip Mix. Spread mixture on tortillas, lightly covering the entire surface of each tortilla. Place chopped black olives on top of each tortilla. Roll up each tortilla. Wrap in plastic wrap and refrigerator for at least an hour. After tortillas have chilled, cut each rolled tortilla into small pieces.

Serve our Mild Chilies and Cheese Dip Mix with tortilla chips, or arrange a lovely Nacho Platter for everyone to sample.

NACHO PLATTER

1 pkg. blue corn tortilla chips
1 pkg. regular tortilla chips
1 bunch green onions, chopped into small pieces
1 small carton sour cream
2 pkgs. Three Angels Gourmet Co. Mild Chilies and Cheese Dip

Prepare Mild Chilies and Cheese Dip according to package directions and microwave for 1 minute.

Let dip cool while you pour the 2 packages of tortilla chips onto a large, decorative platter.

Pour cheese dip over the tortillas, then put a layer of sour cream over the cheese tip.

Top with the green onions. Serve immediately.

A Garden Party - for Kids

GARDEN PARTY

Celebrate a summer birthday with a garden party. This party may be held inside or out but it is best if some of the activities can be done outside. Have your guests dress in casual clothes so they can get messy.




INVITATIONS

You will need white and yellow construction paper, glue and some markers. Fold a piece of the white paper in half. Cut a flower out of the white paper being careful to leave two of the petals joined together. Cut out a yellow circle and glue in the center of your flower. Open the flower to write the invitation inside. Be sure to include your own name, date, address and R.S.V.P. and phone number inside the invitation.

DECORATIONS

Decorate the table with a flowered tablecloth. Use a tin watering can as a vase and place cut flowers in it for your centerpiece. Set new, clean garden tools on the table to use as serving spoons for sunflower seeds or for the fruit salad.

SEED PACKET NAPKIN RINGS

You will need cardboard tubes, construction paper, scissors, glue and packets of seeds. Cut a 2-inch section from a cardboard tube. Cover the section with construction paper. Glue one seed packet onto each napkin ring. Insert the napkins into the napkin rings and lay one at each place setting.

MENU

Serve Garden Pizzas with fruit salad and sunflower seeds. For the grand finale, serve "Sunshine Punch" and Dirty Cupcakes.

GARDEN PIZZAS

Use refrigerated pizza dough to make individual pizzas. Let children create their own pizza. Supply them with tomato sauce, mozzerella cheese, and an assortment of veggies such as mushrooms, onions, and green peppers. Some of your party guests may prefer plain cheese pizza.

FRUIT SALAD

Mix together strawberries, cantaloupe, banana slices, or any other favorite fruit.

SUNSHINE PUNCH

Mix 2 liters of orange soda with one pint of vanilla ice cream.

DIRTY CUPCAKES

Bake cupcakes using your favorite cake mix. Frost the cupcakes with chocolate icing. Crumble crushed oreo cookies on top to make the cakes look dirty. Place gummy worms or gummy bugs on top for decoration.

Place a bowl of sunflower seeds or toasted pumpkin seeds in the center of the table as a snack for children.

ACTIVITIES

PIN THE BEE ON THE FLOWER

Using a poster size sheet of white construction paper, draw a large flower. Hang the poster up on a door or a wall before the party. Make a small bee out of construction paper for each of the children. Place a piece of tape on each of the bees. Have children line up one at a time, blindfold them and ask them to pin the bee on the flower. Give prizes to the children who get their bee in the correct place.

DECORATE TERRA COTTA POTS

Buy a 4" terra cotta pot for each of the children. Supply the children with paint, stickers, ribbons and glue and have them each decorate a pot. They will be able to take these home as party favors later.

PLANTING FLOWER SEEDS

Let the little gardeners plant flower seeds in their terra cotta pots. Have garden tools, dirt, flower seeds and a watering can available for them. Let them get messy since the invitation asked them to wear old clothes. If you have a small plot of dirt in the backyard let them plant a flower garden.

BEAN BAG TOSS

Place dried beans into snack size zipper baggies to make beanbags. Use two large empty coffee cans as targets. Line the children up in two teams. Give each team five beanbags. The children on each team will take turns tossing the beanbags into the coffee cans. They each get five tosses. The team that gets the most beanbags into the target wins. Give out prizes to the winning team.

FAVORS

Guests can take home the flower seed packets from their napkin rings as well as the terra cotta pots they decorated. Other ideas are gummy worms, flower stickers, and gardening gloves.

Garden Pizza

Try this "Garden Pizza" right now in mid-summer, when you can gather most of the ingredients straight from your garden (or load up on them at the farmer’s market) - sweet orange and yellow peppers, juicy red tomatoes, and basil so fresh it will take your breath away.

DSC03977Start with a single-serve prepared pizza crust like Boboli, or some flatbread. I prefer a flatbread-wrap type bread called Flatout. You'll need one single serving Boboli or one piece of Flatout per person.

Use a pastry brush to spread the Flatout, or pizza crust, with a light coating of olive oil, then put it in the oven at 350 degrees for about 5 to 7 minutes.

While the crust is in the oven, take a few pieces of fresh garlic and saute them in olive oil. Then, remove them from the oil and mash them in a bowl with a fork. Add about 1/2 cup of softened cream cheese to the garlic and mix together well. This will be enough cheese mixture for about 4 individual pizzas.

Remove the pizza crusts from the oven. Cover the top of the crusts with the cream cheese mixed with garlic, spreading it out evenly over each pizza. Next, for every two pizzas, cut an orange pepper and a yellow pepper into thin strips, slice a ripe tomato, and tear a few fresh basil leaves into small pieces. Place all these items onto the top of the pizza crusts (as shown). Grate a little Parmesan cheese over the vegetables and add a little freshly ground pepper. Put the pizzas in the oven for about 15 more minutes until the cheeses melt. Serve immediately.

Mint Cooler

381810_pouring_pimmsCool off with this delicious and refreshing Mint Cooler this afternoon.

MINT COOLER

2 c. boiling water
8 mint tea bags
1 1/2 c. lemonade
2 c. orange juice
2 c. crushed ice
2 (12 oz.) cans ginger ale
Orange Slices and mint sprigs

Steep the mint tea bags in the boiling water for about 3 minutes. Add the lemonade, orange juice, ginger ale and mix well. Add the crushed ice and mix again. Pour into a pretty pitcher.

Add orange slices and mint sprigs to the pitcher or garnish individual glasses with these items (and other fruits if desired).

Serve immediately.

Cooking and Decorating with Fresh Herbs

I love to cook with fresh herbs. In the winter, I have a small herb garden in my kitchen window.

In the summer, I like to move all my herbs outside to the garden in my backyard. When I need some fresh herbs for something I'm cooking, I just go to the backyard and snip off a few sprigs of whatever it is I need.

Another thing I do with herbs in the summer (when the herbs are more plentiful and I don't have to be so stingy with them the way I am in winter) is use them to decorate and scent my house.

I cut fresh sprigs of everything from mint to basil and put them in vases filled with cool water.

I set the vases all over the house.

On days like today, when the temperature is soaring over 100 degrees, there's another advantage to bringing some of the fresh herbs inside and keeping them in water.

Instead of having to brave the heat, and trek out to my backyard when I need some fresh herbs for cooking, I just take a sprig of whatever herb I need out of one of the vases.

Fill a vase with water, then arrange a lovely bouquet of basil leaves to tuck inside the vase for a beautiful and fragrant centerpiece for your kitchen or dining room table.

Sparkling Fruit Juices - Just the Thing for a Hot Summer Day!

Ugh...the temperature here today is supposed to reach 101 degrees. In my opinion, that means it's going to be too hot to do almost anything except stay inside and sip some sparkling fruit juice.

This delightful drink takes only a few minutes to make. Add a little sparkling mineral water (like Perrier) to orange juice, lemonade, cranberry juice, or your other favorite fruit juice. Serve in a pretty champagne flute, wine glass, or stemmed water glass. Garnish the glass with a slice of fresh fruit, if desired.

For one serving, blend the following together in a food processor or juicer: 1/2 mango (peeled and sliced), 1 orange (peeled and sectioned), and 1 kiwi (peeled). Put the blended fruits into an attractive stemmed glass and fill to the top with sparkling mineral water. Garnish and serve.

Ahhh....with a glass of sparkling fruit juice, you'll forget all about the soaring temperature outside. Enjoy!

When It's too Hot to Cook, Make a Frozen Yogurt Pie!

SUNDAY'S FOOD TIP

Whew! Summer is definitely here. And as much as I love our baking mixes, I won't be turning on the oven today to bake anything!

Instead, I'll whip up this cool and refreshing Frozen Yogurt Pie.

The phrase "easy as pie" must have been coined after someone made a super simple frozen yogurt pie like this one for dessert. Put together the ingredients for this rich and creamy pie in a matter of minutes, then pop the pie into the freezer to let it set for a few hours before serving.

Use your favorite flavor of low fat yogurt for this recipe. Raspberry and Key Lime yogurt are both crowd pleasers.

Frozen Key Lime Yogurt Pie



FROZEN YOGURT PIE

2 (6 oz. each) containers flavored low fat yogurt

1 (8 oz.) tub whipped topping (COOL WHIP), thawed

1 (6 oz.) graham cracker pie crust (readymade or make your own according to directions on a package of graham cracker crumbs)


Combine yogurt and whipped topping in a medium bowl; stir gently until well blended. Spoon into prepared crust.

Freeze pie 4 hours or overnight until firm.

Note: Remove pie from freezer 15 minutes before serving; let stand at room temperature until pie can be cut easily (the pie is much more flavorful when it has thawed just a bit). Store leftover pie in freezer.

See? Dessert can be as "easy as pie," yet incredibly delicious!

ICE CREAM CONE CUPCAKES

Flat-bottomed ice cream cones (like the one pictured above)
1 cake mix (any flavor) - it will call for eggs and oil, so you'll need those items also
1 can prepared cake frosting (any flavor)
Candy sprinkles, jimmies, colored sugar, etc. to decorate each cupcake
1 muffin tin (for 12 muffins)


Prepare the cake mix according to the directions on the package. Put one flat-bottomed ice cream cone in each section of a muffin tin (this is so the cones won't fall over in the oven). Spoon enough cake batter into each cone so that it is about half full. Bake the cupcakes according to the directions on the cake mix box. Repeat this process until you've used all of the cake batter.

Cool the cupcakes completely. Frost each cupcake with the prepared frosting and decorate with the candy sprinkles, jimmies, colored sugar, etc.

Store in a covered container or serve immediately.

Scented Sugars

THURSDAY'S FOOD TIP

Today I made a huge pitcher of iced tea. I wanted to sweeten it with something besides regular sugar, so I used some mint sugar that I made several weeks ago.

Here's an article I wrote last summer that explains how you can make your own scented sugars, too. Enjoy!

SIMPLY WONDERFUL SCENTED SUGARS

Scented sugars are so easy to create and they're simply wonderful. They make perfect gifts too.

To make your own scented sugars you’ll need some clean, dry jars with good seals, cheesecloth, plenty of granulated sugar (and other sugars, if desired), and a nice variety of herbs, spices, and flowers (always choose fresh herbs and flowers that have NOT been sprayed with chemicals).

Try the following combinations, then experiment to come up with your own signature variety of scented sugar.

NOTE: The herbs and spices will begin to flavor the sugars in about 3 days, but let them sit in the jars, undisturbed, in a cool, dry place out of direct sunlight, for about 2 weeks for the most flavor.

LAVENDER SUGAR

Put 2 tablespoons of dried lavender into a piece of cheesecloth and tie it closed. Place the cheesecloth in a jar and add 1/2 cup granulated sugar. Tightly close the lid to the jar.

VANILLA SUGAR

Split a whole vanilla bean and put it in a clean, dry jar. Bury the bean in granulated or confectioners’ sugar. Tightly close the lid to the jar.

GINGER SUGAR

Mix 1/2 teaspoon of ground ginger with 1/2 cup of granulated sugar in a clean, dry jar. Tightly close the lid to the jar.

STAR ANISE SUGAR

To create this licorice tasting sugar, put 8 whole star anise and 1/2 cup of granulated sugar into a clean, dry jar and mix them together. Tightly close the lid to the jar.

CLOVES SUGAR

Combine 10 whole cloves with 1/2 cup granulated sugar in a clean, dry jar. Tightly close the lid to the jar.

CITRUS SUGAR

Use a vegetable peeler to remove long strips of zest (the outside peel) from a large orange, 2 medium lemons, or 4 medium limes. Put the zest in a clean, dry jar and bury it with granulated sugar. Tightly close the lid to the jar.

MINT SUGAR

Wash and thoroughly dry some fresh mint leaves (use your favorite variety of mint - spearmint, peppermint, chocolate mint, etc.) Put a little granulated sugar in the bottom of the jar, then add a layer of mint leaves, then another layer of sugar. Keep layering the mint leaves and sugar until the jar is full. Tightly close the lid to the jar.

SCENTED GERANIUM SUGAR

Wash and thoroughly dry some leaves from a scented geranium (rose, lemon, orange, pineapple, or chocolate-scented geraniums, etc. - not regular geraniums). Put a little granulated sugar in the bottom of the jar, then add a layer of scented geranium leaves, then another layer of sugar. Keep layering the scented geranium leaves and sugar until the jar is full. Tightly close the lid to the jar.


TO USE THE SCENTED SUGARS:

Sprinkle any variety of scented sugar over fruit, or hot or cold cereal.

Use scented sugar instead of plain sugar in a sugar cookie recipe – or in any cake, cookie, or custard recipe that calls for granulated sugar.

Add citrus sugar to hot or iced tea.

Try a little vanilla sugar in coffee, or mix it with powdered cinnamon and use for cinnamon toast or French toast.

Add mint sugar to tea or lemonade.

Use scented confectioners’ sugar when making icings for cakes and brownies.


Final Note: Once the herbs, spices, or flowers have flavored the sugar, remove them from the jars if you will use the jars of sugars as gifts.

All About Cherries

One of these gadgets is particularly handy if you like to use fresh cherries (and not just the cherry pie filling you buy in a can) to make cherry pie. Check out a wide variety of cherry pitters here.

Did you know there are two main groups of cherries - tart cherries and sweet cherries?

Tart cherries are sometimes called sour cherries or pie cherries. Usually, they are not sold fresh. Instead, you'll find them canned or frozen. The most famous sweet cherry variety is the Bing cherry, but there are more than 1,000 varieties of sweet cherries. Rainier and Queen Anne are other popular sweet cherries you'll want to try.

Research shows that Montmorency tart cherries may relieve the pain of arthritis and gout and help fight cancer and heart disease because tart cherries are bursting with antioxidants. But most of us don't eat cherries because they're good for us. We eat them because they taste so good!

EXTRA TIP: To enhance the flavor of cherries in baked goods, add 1/8 to 1/4 teaspoon of pure almond extract to the recipe. Wow! The intense cherry flavor will be something to cheer about!

Try Heavenly Jam Bars Made With Lemon Curd

HeavenlyjambarsOur Heavenly Jam Bar Mix is usually made with jam, of course. But, for easy luscious lemon bars that will melt in your mouth, try making them with lemon curd instead of jam. These lemon bars are perfect for an afternoon tea or light dessert, and they're so simple to make. Purchase lemon curd at specialty food stores and even most groceries or make your own lemon curd. Here's a recipe:

TANGY LEMON CURD

Some lemon curd recipes call for butter, but you’ll only need 4 ingredients for this variation. For 1 cup of lemon curd use:

4 egg yolks (at room temperature)
1/2 c. granulated sugar
Grated zest of 1 lemon
1/2 c. fresh lemon juice (you’ll need at least 1 large lemon or 2 small ones to get this much juice)

Juice the lemon(s) to get 1/2 cup of fresh juice, then grate the outside of the lemon being careful not to get any of the white pith (this can be bitter). Set the juice and the zest aside.

Whisk together the egg yolks and sugar in a small stainless steel bowl. Add the zest, then whisk in the lemon juice. Set the bowl over a pot of simmering water and whisk the mixture constantly for about 10 minutes until it thickens.

Remove bowl from heat and strain the lemon mixture through a fine sieve into a pretty glass or ceramic container. Cover with plastic wrap. Refrigerate until cool. Lemon curd can be stored in the refrigerator for about 2 weeks.

Variations: Instead of lemons and lemon juice, use limes or oranges for a tangy lime curd or a sweeter orange curd.

Cool Off With a Dreamsicle Shake!

387382_suco_de_laranjaWhen I was a kid, my favorite popsicle was a Dreamsicle - that delicious combination of vanilla ice cream and orange sherbet. If ever there was a match made in heaven, that was it!

Now, here's another refreshing way to enjoy the combined tastes of orange and vanilla - a Dreamsicle Shake. This is a little bit more like an Orange Julius (remember those?) - especially if you add just a touch of pineapple juice. Enjoy!



DREAMSICLE SHAKE

6 oz. frozen orange juice concentrate

1 c. milk

1 c. water

2 Tbsp. sugar

2 tsp. vanilla

12 ice cubes


Put all the ingredients into an electric blender and blend until smooth.

Serves 2.

Variation: Add a little pineapple juice for a slightly different taste.

The Best Potatoes for Potato Salad

551863_potatoes_2To most of us, it wouldn't seem like summer without potato salad. It's an all time favorite at any summer picnic or barbecue.

Part of the trick to making the perfect potato salad is choosing the perfect potatoes for this particular dish. Not just any type of potato will do. Choose potatoes with a low to medium starch content; the type often called boiling potatoes or salad potatoes. Lower starch potatoes will keep their shape and not fall apart like starchier baking potatoes.

Some of the best types of potatoes for the perfect potato salad are:

Yukon gold
Yellow Finn
Red Bliss
California long whites
Main or Kennebec potatoes
Fingerlings
Heirlooms

Here's another tip for the perfect potato salad. Try making potato salad with our Divine Dill Dip Mix. Combine the mix (according to directions on the package) with sour cream and mayonnaise. Use in place of regular mayonnaise. Since the mix includes onions, dill, and other spices, you won't need to add anything else for a delicious and attractive potato salad. Granola to Make With Your Kids!

Spend time in the kitchen with your children this weekend preparing some delicious granola. This breakfast treat is much better for your kids than those sugary cereals with food colorings and other additives found in the supermarket. And your children will be proud of themselves for creating something the entire family can enjoy.

There are many recipes for homemade granola. My favorite is this one from the show, BAREFOOT CONTESSA. The recipe is no longer online, so instead of a link, here's the recipe. Enjoy!

HOMEMADE GRANOLA
As seen on BAREFOOT CONTESSA, inspired by Sarah Chase’s OPEN HOUSE COOKBOOK

4 c. old-fashioned rolled oats

2 c. sweetened shredded coconut

2 c. sliced almonds

3/4 c. vegetable oil

1/2 c. good honey

1 1 /2 c. small diced dried apricots

1 c. small diced dried figs

1 c. dried cherries

1 c. dried cranberries

1 c. roasted, unsalted cashews


Preheat the oven to 350 degrees F.

Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 X 18 by 1-inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.

Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.

Makes 12 cups.

1. Add one tablespoon of the dill dip seasoning to one cup of sour cream, or yogurt. Use as a dip for veggies or chips.

2. Serve the dill dip in a small round of pumpernickel bread. Cut out the center, fill with dip, and cube center cutouts for dipping.

3. Use the dill dip to make a quick and delicious lunch. Bake a potato in the microwave, top with some dill dip seasoning mixed with sour cream. Yum!

4. Make a cheese ball with 12 oz. cream cheese, 1 c. drained, crushed pineapple, and one pkg. Three Angels Divine Dill Mix for a Dilly of a Cheese Ball. Roll in chopped nuts and parsley. Delicious!

5. Add 1 Tbsp. of dill dip to each cup of white sauce. Pour over grilled chicken strips. Serve the chicken over rice or noodles.

6. Use the dill dip as a "dry rub" for chicken or fish.

7. Use the dill dip in your favorite potato salad recipes.

8. Prepare the dill dip with sour cream; then serve with cooked salmon or as a tartar sauce for other fish.

9. Add a small can of drained, chopped water chestnuts to the dill dip made with sour cream.

10. Mix the dill dip with sour cream. Serve with hot wings or pretzels.

11. Use a little of the dry dill mixture to season homemade soups.

12. Mix the dry dill dip with softened cream cheese for a sandwich or bagel spread. Add crushed pineapple for a little tang, or chopped water chestnuts for a special crunch.

Make the Perfect Burger for Your 4th of July Picnic or Barbecue!

Is there anyone in the USA who is NOT grilling at least one meal this 4th of July holiday?

Probably.

But cooking outdoors is one popular way friends and family get together to celebrate this national holiday, and hamburgers are one of the most popular foods they grill.

If you’ll be firing up the grill today, try these tips to create the perfect burger:

For the juiciest burger start with the best meat. A good choice is ground chuck because it is usually about 80% to 85% percent meat and 15% to 20% fat. If you use ground meat that is too lean the burgers will be dry.

Make flat, uniform patties out of the meat that are no thicker than 3/4 inch. Big bulky burgers won’t cook evenly. Plus, you’ll have the urge to squish them down with a spatula as they cook and this will squeeze out the juices that give them their "perfect burger" flavor.

Don’t overmix as you prepare the patties. This will toughen the meat.

Season the ground beef with a little salt and freshly ground pepper as you prepare the patties.

And here’s a tip I saw Ina Garten do once on her popular cooking show, BAREFOOT CONTESSA. As you’re preparing the patties, tuck a pat of butter into the center of each one. As the patties cook, the butter will melt giving the burgers a little added juiciness.

Now, oil the grill grid before using. Grill the burgers over hot coals (or a hot fire from a gas grill) for about 5 to 7 minutes per side if you like your burgers "medium." Grill them a little less for "rare" burgers and a little longer (about 8 to 9 minutes per side) for "well done" burgers. Your grill might take longer or less time, depending on the intensity of the heat, so make a thin cut in a couple of the patties after grilling them for a few minutes to be sure you aren’t overcooking them.

Caution: Remember to put cooked burgers on a clean plate – and not the one you used for the raw burgers - so you don't contaminate the cooked meat.

Amaretto Brownie Parfaits - Quick Summertime Treats

Nothing is quite as impressive, yet so easy to prepare, as a simple parfait. And now, with our Amaretto Brownie Mix, you can create beautiful and delicious Amaretto Brownie Parfaits.

Prepare the Amaretto Brownie Mix according to directions on the package, but reserve a tablespoon or so of the sliced almonds.

Let the baked brownies cool completely, then cut them into small pieces (in about 1 to 2 inch squares).

Layer the brownie pieces with vanilla ice cream and hot fudge sauce or caramel sauce in an attractive glass. Top with whipped cream and some of the reserved sliced almonds, and fresh fruit (if desired). Serve immediately.

Variation: Instead of hot fudge sauce or caramel sauce, layer the brownies and ice cream with cherry pie filling or chocolate pudding.

BW-112 If you keep up with this blog fairly regularly, I know what you're thinking - She has every juicer known to the modern world. Why is she recommending yet another one?

Well, here's why.

I love my electric juicer. But, since it's electric, it's not much good on picnics or camping trips.

My old-fashioned glass juicer is one of my prized possessions. My mother gave it to me years ago, so either she used to use it, or my grandmother did, which gives it great sentimental value. Plus, I just think it looks so cute and quaint on a shelf in my kitchen.

But, since it's made of glass, it doesn't travel well either. I certainly wouldn't want to break it, lugging it around outside on a picnic. Another drawback with this little juicer is that the seeds go right into the juice. That means I have to use a separate strainer with it.

Alas...the Screwpull Citrus Juicer has none of these drawbacks. In fact, I don't even have to halve the lemon or orange or whatever fruit I'm juicing. I just slide the whole fruit onto the juicer. A little strainer keeps the seeds from joining the juice. And, of course, I don't need electricity to use this handy little gadget either.

So, you see. There really are reasons to have a variety of juicers.
