Sun-Blessed Tomato Herb Salad Dressing

Try this simple and delicious salad dressing made with a package of Sun-Blessed Tomato Herb Dip Mix. M-m-yum!

SUN-BLESSED TOMATO HERB SALAD DRESSING

1 c. oil (olive oil is best)
1/2 c. balsamic or red wine vinegar
1 Tbsp. sugar
1 to 2 Tbsp. of Three Angels Sun-Blessed Tomato Herb Dip Mix

Add tomato herb dip mix and sugar to vinegar and stir until sugar is dissolved. Add oil and whisk until well blended.

The Perfect Pitcher for Sun Tea - Another Gadget You Just "Gotta Have"

Gee. It's been a while since I've had time to find any new and interesting "gotta have" gadgets for the kitchen. But when I saw this Sangria Pitcher from www.williams-sonoma.com in the June issue of COUNTRY LIVING magazine, I knew I'd found another gadget I just "gotta have."

I don't know why, but for some reason it always makes me feel like I'm getting a productive start on my day if I put a clear jar filled with water and several tea bags out on the back deck in the morning, so that by early afternoon I have a fresh jar of sun tea. This pitcher will be even better than the clear glass jar I've been using. After the tea has brewed in the sun I can put ice in the special insert to cool off the tea without watering it down. The pitcher is actually called a Sangria Pitcher, so I guess I'll just have to use it for Sangria this summer too. Simply add a can of beer and half of the parmesan/herb packet to the bread mix and spoon it into a greased loaf pan. Dillicious Cucumber & Salmon Appetizers

THURSDAY'S FOOD TIP:

These attractive cucumber and salmon appetizers are a snap to make with our Divine Dill Dip Mix. Simply add cream cheese or sour cream to the dip mix.

DILLICIOUS CUCUMBER & SALMON APPETIZERS


1/2 pkg. Divine Dill Dip Mix

1 c. sour cream OR 4 oz. cream cheese

1 large cucumber

1 pkg. (about 3 oz.) smoked salmon

Fresh dill or canned pimento


Combine the sour cream or cream cheese and Divine Dill Dip Mix and refrigerate for at least an hour, so the onions in the dip mix will soften and the flavors will blend with the sour cream or cream cheese.

Slice a large cucumber in half. With a vegetable peeler, peel the length of each cucumber, leaving narrow strips of the peel intact (see photo). Cut the cucumber into 1 to 2 inch slices, then make a little cup out of each piece of cucumber by hollowing out a bit of the cucumber. Put about a teaspoon of the dill dip mixture into the hollow space of each cucumber. Cut a small piece (about 2 inches or so) of smoked salmon and roll it up. Place the rolled salmon on top of the dill dip mixture that is inside the cucumber slice. Garnish with a little minced dill or a small piece of canned pimento. Cover with plastic wrap and chill until ready to serve.

Sun-Blessed Tomato Herb Puffs

WEDNESDAY'S FOOD TIP

These tasty Sun-Blessed Tomato Herb Puffs are easy to make, yet oh-so-flavorful. They're perfect as appetizers or snacks for a May graduation party or bridal shower.

SUN-BLESSED TOMATO HERB PUFFS


1 box puff pastry

1 pkg. Sun-Blessed Tomato Herb Dip Mix

8 oz. cream cheese, softened


Combine the tomato herb dip mix with the softened cream cheese and put it in the refrigerator for about an hour to blend. After an hour, remove the cream cheese mixture from the refrigerator. Let it soften while you preheat the oven and prepare the pastry.


Preheat the oven to 400 degrees.

Thaw 2 sheets of puff pastry.

When thawed, place one sheet of pastry on a lightly floured boad. Use a rolling pin to roll the dough out until it's a 13-inch square. Spread 1/2 of the cream cheese mixture over the entire surface of one sheet of the puff pastry. Fold the sides of the pastry toward the center - so they go halfway to the middle. Fold them again, this time so the 2 folds meet exactly at the middle of the dough. Then fold one half over the other. Slice the dough into 3/8 inch slices and place them, cut side up, on a baking sheet lined with a silicone baking mat. Repeat this entire procedure with the 2nd sheet of puff pastry.

Place each baking sheet in the oven for 6 minutes. Remove from the oven and turn each pastry slice over. Return baking sheet to the oven and continue baking for an additional 6 to 8 minutes - until each slice of pastry is done and the edges have started to brown.

Bake a Cookie Tart

TUESDAY'S FOOD TIP

Turn an everyday batch of cookie dough into an impressive cookie tart. Instead of spooning the batter onto a cookie sheet, simply pour it into a greased tart pan and bake for about 20 minutes (until the edges of the tart start to brown). When the tart has finished baking, let it cool. When completely cool, remove the sides of the tart pan. Place the cookie tart on a footed cake plate and pipe some whipped cream around the edges of the tart. Drizzle a little chocolate, raspberry, or butterscotch syrup over the tart, then serve immediately.

A Spicy Chicken Rub

SUNDAY'S FOOD TIP

315569_garden_celebration If you're like me, you love eating outdoors. And, if you can cook outdoors, too, so much the better. Here's a delicious spicy chicken rub. Concoct the rub and prepare the chicken, then let someone else do the grilling outdoors while you set a beautiful table under the trees, then relax and enjoy a special evening meal with those you love.

You probably already have all the ingredients for this mixture in your cupboard. It makes enough rub to coat about 4 large chicken breasts or 1 small (cut up) chicken. Use chicken that still has the bones and at least some skin. As the chicken grills, the sugar and fat melt with the herbs and spices so the meat is moist and flavorful.


SPICY CHICKEN RUB


1/4 c. sugar

1 Tbsp. salt

2 tsp. freshly ground pepper

1 1 /2 tsp. lemon zest

2 Tbsp. chili powder

1 tsp. ground cumin

2 tsp. ground ginger

1 tsp. oregano

2 tsp. dry mustard

2 tsp. red pepper flakes

1 1/2 tsp. onion salt

1 1 /2 tsp. garlic powder


Wash the chicken pieces. Blend together all the rub ingredients in a large shallow bowl or other wide dish. Dip each piece of chicken into the spice mixture. Rub the mixture into the skin, and under the skin, of each piece of meat. Put the coated chicken pieces in a large resealable plastic bag and place the bag in the refrigerator until time to grill the chicken.

When it’s time to cook the chicken, grill it as you normally would. It will smell wonderful as it cooks!

NOTE: The longer you leave the chicken in the rub mixture in the refrigerator, the better (but allow for at least 3 hours).

Make a Flavorful Bread Dipper

STH007Make a flavorful bread dipper with olive oil and Sun Blessed Tomato Herb Dip Mix (directions are on the package) from the Three Angels Gourmet Co.

Once you've prepared the bread dipper, sprinkle some into a small bowl, along with a little balsamic vinegar and finely grated parmesan cheese. Dip small pieces of french bread or Italian bread into the bowl. Yum.

You can also use the bread dipper to create a delicious, yet simple, side dish with your favorite pasta (bowtie pasta is great for this but you can use spaghetti, fettuccine, or any kind of pasta), and Parmesan cheese.

Cook the pasta, then drain it. While the pasta is still hot, drizzle with the prepared bread dipper (olive oil infused with Sun-Blessed Tomato Herb Dip Mix). Stir to distribute the oil evenly throughout the pasta. Grate fresh Parmesan over the pasta and stir it through the pasta until the cheese begins to melt. The tomato-herb olive oil helps the cheese stick to the hot pasta, and the combination of ingredients gives it a wonderful flavor.

Sugar Cookie Mix: Another Versatile Product from the Three Angels Gourmet Co.

Three Angels Gourmet Co. Sugar Cookie Mix is another versatile product. Kids can easily make a huge sugar cookie by patting all the dough into a round pizza pan and baking it. When the giant cookie has cooled, all they have to do is frost it with some colorful powdered sugar frosting, then decorate it any way they like. A giant cookie like this is great for graduation parties, Mother's Day teas, or for bridal showers.

For something a bit more elegant, prepare a scrumptious cookie-tart in a tart pan, ice it with a cream cheese mixture, then decorate with pieces of fresh fruit.

Here’s all you need to make this delicious and eye-appealing cookie-tart:

1 pkg. Three Angels Gourmet Co. Sugar Cookie Mix

1 egg, plus 1 egg yolk

1 stick butter

An assortment of fresh fruit, cut into small pieces

4 oz. cream cheese, softened

1/4 c. sugar

A little vanilla flavoring (1/4 tsp. or less)


Heat oven to 350 degrees. Make cookie mix according to directions on package and chill for at least 30 minutes.

When the dough is cold, mold it into a tart pan that has been greased with cooking spray. Bake the dough at 350 degrees for about 15 to 18 minutes, until golden brown. Cool completely after baking.

In a small bowl, combine the cream cheese, sugar, and vanilla; beat until fluffy. Spread a thin layer of this mixture over the cooled cookie crust. Arrange fruit over the cream cheese mixture as shown in the photo above.

Drizzle warm apricot preserves over the fruit, if desired. Refrigerate at least one hour.

To serve, cut into wedges. Store in refrigerator. Makes about 12 servings.

Sun-Blessed Tomato Herb Dip Mix

STH007If you sell our Sun-Blessed Tomato Herb Dip Mix - or you buy it from a favorite store near you - then we want you to know how versatile this product is.

Use it:

1. As a Bread Dipper: Add Tomato Herb Mix to extra virgin olive oil and whisk together. For even more flavor, add balsamic vinegar and parmesan cheese plus salt and pepper to taste. Serve with slices of Angel Ale Bread or Angel Cloud White Bread.

2. To create a sidedish: Take above mixture and sprinkle over hot pasta and then add a little Parmesan cheese for a tasty side dish…or use as a meat marinade.

3. For a Tomato Herb Spread: Mix Tomato Herb Mix with cream cheese until well blended. Great topping for bagels and hearty bread slices.

4. As a Salad Dressing: Add Tomato Herb Mix and sugar to balsamic or red wine vinegar and stir until sugar is dissolved. Add oil, and whisk until well blended.

5. To make a Herb Veggie Pizza: Mix Tomato Herb Dip Mix with cream cheese. Spread over the top of a baked pizza crust, and then arrange chopped vegetables over top. Serve immediately or keep refrigerated until ready to serve.

6. For Mediterranean Rollups: Mix cream cheese and Tomato Herb Dip Mix. Spread onto flour tortillas, then place chopped black olives on top and roll. Refrigerate and cut into pinwheels.

Heavenly Jam Bar Mix Special

It's always fun to watch people's reactions when we offer them a Heavenly Jam Bar as part of a product sampling in a store or at a trade show or retail sale. They take a bite of the bar, then literally swoon. The bars are THAT good!

Here’s another heavenly dessert you can prepare with this mix:

CRANBERRY CRUNCH

2 c. fresh cranberries, washed
1/3 c. granulated sugar
3/4 c. chopped pecans
1/2 c. water
1 stick butter, melted
1 pkg. Heavenly Jam Bar Mix


Directions:

Preheat oven to 350 degrees. Mix cranberries and sugar and place in bottom of an ungreased shallow casserole dish. Pour the water on top of the cranberries. Combine the melted butter, Heavenly Jam Bar Mix, and chopped pecans in a bowl until crumbly. Pour this crumbly mixture over the cranberries and pat down. Bake at 350 degrees for 45 minutes (or until mixture is brown around the edges and cranberries are soft).

Serve the Cranberry Crunch topped with vanilla ice cream, or whipped cream, if desired.

A Scone Pan - Another "Gotta Have" Kitchen Gadget

cockrelloneYesterday I sampled several of our products at a store outside of Kansas City called Cockrell's Mercantile. It's a wonderful complex of little buildings offering everything from our "heavenly gourmet mixes" to decorative garden accessories.

Two of the items I sampled yesterday were our Cranberry Scones and our Apple-Cinnamon Scones. As usual, people loved them both. One thing that also "sold" customers on these products was the fact that, unlike traditional scone mixes that need to be rolled out and cut then shaped on a cookie sheet, scone mixes from the Three Angels Gourmet Co. produce a crumb mixture (not a dough). This crumb mixture is then simply spooned into a scone pan - or a muffin tin - and then baked. The result (when using a scone pan) is a batch of delicious, beautifully shaped scones, every single time!

Yesterday, I think I sold almost as many scone pans as I did scone mixes. I really do love scone pans!

Crockpot Russian Chicken

71106_chicken_wingsHere's a recipe for easy Crockpot Russian Chicken. This isn't a new recipe, but recently a friend made this dish with chicken wings and served it as part of a casual (and delicious) lunch at our monthly book club meeting. I think I prefer this made with chicken wings or thighs instead of chicken breasts - which is the way I used to make it.

Put this dish in your crockpot on Sunday morning, and by Sunday evening you'll have dinner ready with just the addition of some brown rice and a tossed salad. M-m-m...yum!


CROCKPOT RUSSIAN CHICKEN

1 (16 oz.) bottle Russian dressing

1 env. onion soup mix

1 (10 oz.) jar apricot preserves

4 to 6 large pieces of chicken (I prefer to use a large package of chicken wings or thighs)

Salt and pepper to taste

Combine the Russian dressing, onion soup mix, and apricot preserves in a bowl and pour mixture into the crockpot. Season the chicken with salt and pepper. Place chicken, skin side down, in the crockpot. Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours).

Serves 4-6.

sundriedtomatoI always keep some frozen puff pastry in the freezer. I use it with a package of our Sun Blessed Tomato Herb Dip Mix to make some yummy appetizers. But learn other things to do with this "secret ingredient."

THE LAZY COOK'S SECRET INGREDIENT

Have you ever found yourself wondering how to give a new lift to old favorites? Or worrying over how you can tempt those picky eaters?

Try keeping sheets of frozen puff pastry in the freezer.

Puff pastry is one of the most versatile, and at the same time one of the most overlooked, weapons in a cook's armory. It gets less exposure than it should because many people are nervous of using it. If you are one of those who tremble at the thought of getting it right, read on. You are about to become an expert.

Frozen puff pastry is one of the food industry's great success stories. From the cook's point of view it's easy to handle, requires no preparation and, even more to the point, it works every time.

On top of all that, it's versatile enough to be used in any number of ways, from making mini pizzas to decorating the lamb roast. There is practically no end to it's usefulness.

Take desserts, for example. Cut one sheet of thawed out pastry into four, place a spoonful of fruit in the center of each one, bring the opposite corners of the pastry together and crimp them between finger and thumb. Lightly glaze with an egg beaten in milk, top with half an apricot and a sprinkling of sugar and pop into an oven for 15 minutes at 200ºC.

You can use exactly the same technique for individual savory pies or, for a terrific farmhouse-style finish, use two whole sheets, one for the base and one for the top.

You don't need a pie dish – put the base directly on to a baking sheet, add the filling, top with the second sheet and fold over the edges, crimping the corners together. The base will be light and crisp when cooked and the top golden brown and flaky.

Once you get started on using puff pastry in this way, you may find it difficult to stop. One great technique is to cut the pastry into shapes using a cookie cutter, glaze and bake and then use them to decorate whatever dish you are serving.

You could use crescent shapes to top off a casserole, or cut triangles and place them artfully on sliced meat or chops. You can even cut the pastry into rounds, top with something like sweet chili sauce and grated cheese, bake at 200ºC for 15 minutes or so and serve with pre-dinner drinks.

The truth is that you can go down any path your imagination takes you. As an ingredient this kind of pastry is just so forgiving it's hard to get it wrong. There are really only a couple of things to guard against.

One is excessive temperature, either too hot or too cool. Most ready-made puff pastry 'lifts' successfully at around 200-220ºC. The other thing to bear in mind is not to overdo the glaze. Too much egg-wash will produce a soggy result which may not rise successfully. Just a light brushing will do.

So there you have it. A great product that's labor saving, versatile, looks good and tastes great. What more could you ask for?

What Can You do With Dry Rubs?

DRY RUBS - NOT JUST FOR MEAT ANYMORE

When we hear the culinary term "dry rub", our minds tend to immediately imagine using it on a great steak or on ribs. But dry rubs offer so much more than just lending flavor and moistness to meats. Dry rubs are versatile enough to be used just about anywhere you want a kick of spice and flavor.

Here are a few of our favorite suggestions:

Next time you are making a sandwich, take a bit of your favorite dry rub and mix it with the mustard or mayonnaise. The boost in flavor will take your sandwich from ordinary to extraordinary!

When making a salad dressing, add a bit of dry rub to the mix to kick up the flavor.

Adding a little dry rub to your rice will give you aromatic seasoned rice, perfect with chicken! Dry rubs also work great when used to season casseroles.

Here's a tip for your next party...add some dry rub to your sour cream or yogurt, and voila, you have a great and extra easy dip. This also tastes great when used on baked potatoes!

Speaking of potatoes, sprinkle a spicy dry rub on your fries when they come fresh out of the fryer, and you'll have created your very own seasoned french fries.

Use dry rubs in your sauces to accentuate and accompany the dry rub used on the entree.

Sprinkle a dry rub on your popcorn instead of salt and you won't be disappointed.

Use your favorite chili mix instead of the jar stuff from the grocery store. Chili mixes tend to have a better variety of peppers and more flavor than your standard off the shelf chili powder. Use the mix anywhere you would normally use chili powder.

As you can see, dry rubs really do provide you with a lot of options. As we say at Caroline's Rub, you are only limited by your culinary imagination.

And here's another food tip for today - It's so easy to make an elegant dessert with our Raspberry Brownie Mix. Just make the mix according to the directions on the package. Instead of pouring the mixture into an 8x8 inch square pan, put it in a fluted tart pan.

Sprinkle the top of the batter with the sliced almonds that are included in the package. Bake as directed. Let the brownies cool, then remove the sides of the tart pan and place the brownies on a footed cake plate.

Drizzle a little heated chocolate syrup, or raspberry jam that has been liquified in the microwave, on top of the brownies, then pipe whipped cream all around the outer edge. No one will dream this "brownie tart" was made from a mix!
