Frustrated with Technology!

579286_screaming

Sometimes I hate technology.

It's great when everything works correctly.

But it's so frustrating when things don't work, yet you can't figure out WHY they aren't working correctly, so you have NO clue as to how to fix them.

If you have had trouble signing up for our mailing list - so you'd receive our free ebook - The Twelve Days of Dip Mix Ideas - try this:

Send an email to: suzannelieurance@hotmail with the words "12 days of dip mix ideas" in the subject line and I'll email you a copy of the ebook.

I'll also keep working on the opt-in box. Someday maybe I'll be able to figure out why it isn't working correctly. Thanks for your patience until then.

Tips for Using Sugar Cookie Mix

TODAY'S FOOD TIPS

Three Angels Gourmet Co. Sugar Cookie Mix is another versatile product.

Kids can easily make a giant Christmas cookie by patting all the dough into a round pizza pan and baking it.

When the cookie has cooled, all they have to do is frost it with some colorful powdered sugar frosting, then decorate it any way they like, so it looks like a giant sugar cookie.

A giant Christmas cookie makes a festive dessert for holiday buffets.

For something a bit more elegant, prepare a scrumptious cookie-tart in a tart pan, ice it with a cream cheese mixture, then decorate with pieces of fresh fruit.

fruit pizza

Here’s all you need to make this delicious and eye-appealing cookie-tart:

1 pkg. Three Angels Gourmet Co. Sugar Cookie Mix

1 egg, plus 1 egg yolk

1 stick butter

An assortment of fresh fruit, cut into small pieces

4 oz. cream cheese, softened

1/4 c. sugar

A little vanilla flavoring (1/4 tsp. or less)

Heat oven to 350 degrees. Make cookie mix according to directions on package and chill for at least 30 minutes.

When the dough is cold, mold it into a tart pan that has been greased with cooking spray. Bake the dough at 350 degrees for about 15 to 18 minutes, until golden brown. Cool completely after baking.

In a small bowl, combine the cream cheese, sugar, and vanilla; beat until fluffy. Spread a thin layer of this mixture over the cooled cookie crust. Arrange fruit over the cream cheese mixture as shown in the photo above.

Drizzle warm apricot preserves over the fruit, if desired. Refrigerate at least one hour.

To serve, cut into wedges. Store in refrigerator. Makes about 12 servings.

Before serving, pop the cheeseball out of the mold and place on a decorative serving tray. Surround the Christmas tree cheeseball with assorted crackers.

"Almost" Homemade Soup

TODAY'S FOOD TIP

pasta_tortelli_175

When you want something hot, filling and quick to prepare for dinner on a cold winter's night, try this Tortellini Soup.

It's "homemade" enough that you can serve it to company, yet easy and quick enough to prepare when friends drop in for dinner at short notice.

Serve it with a loaf of warm, crusty bread like Angel Ale Herb Bread from the Three Angels Gourmet Co. and a tossed salad and you've got dinner. This recipe serves 4.

TORTELLINI SOUP

2 (14.5 oz.) cans chicken broth (like Swanson's)

1 (13 oz.) jar pasta sauce (any flavor)

1 (16 oz.) can great northern beans

1 (9 oz.) pkg. refrigerated tortellini (any flavor)

In a soup pot, mix the chicken broth and pasta sauce. Bring mixture to a boil. Add the beans and tortellini. Boil for 6 minutes, or until the tortellini float and are tender.

Cranberry-Brie Holiday Tassies

TODAY'S FOOD TIP

Tassies are usually little tarts or cookies made from butter, flour, and cream cheese and baked in tiny muffin tins, but these holiday treats are a bit different since they're made with puff pastry. I still call them 'tassies" though because they're bite-sized and made in tiny "tassie" tins. They're perfect as appetizers or even as part of a dessert buffet. The rich, gooey, buttery brie combined with the tart, yet sweet, cranberry sauce is a luscious combination. I like the little crunch the pecans add to the tassie, but they're just as good without any nuts.

DSC04345

CRANBERRY-BRIE HOLIDAY TASSIES

Puff pastry dough

Cranberry sauce (whole berry is the kind I use)

A circle of good Brie

Chopped pecans (if desired)

Preheat oven to 325 degrees. Unfold the puff pastry dough and let it thaw, then smooth it out just a bit with a rolling pin. Cut the dough into 2 inch squares and smooth one square into each hole of the mini-muffin tin (they'll look like mini-pie crusts once they're smoothed into the tin). Put a 1 inch piece of Brie into the center of each of the puff pastry "crusts," then add a little chopped pecan. Top with a teaspoon or so of the cranberry sauce and put the tassies in the oven for about 10-15 minutes (just until the pastry starts to brown at the corners, so watch them carefully).

Let cool for a few minutes before serving, but serve warm.

Christmas Dinner: Make It With Mixes!

If you live in Kansas City be sure to pick up a copy of At Home in the Northland, a magazine for residents north of the river.

NorthlandIn the winter 2006 issue that just came out, freelance writer Diane Samson wrote a nice article called Kansas City Christmas Dinner: Make it with Mixes.

Samson gives ideas for using mixes from three Kansas City companies - Three Angels Gourmet Co., Rabbit Creek Gourmet, and Laurie's Kitchen - to put together a delicious holiday meal.

Look for the article on pages 48-49 of the magazine.

Thank you, Diane, and At Home in the Heartland, for featuring "heavenly gourmet mixes" from the Three Angels Gourmet Co. in your article.

The Twelve Days of Dip Mix Ideas - Day 6

TODAY'S FOOD TIP

If you love nachos with queso dip, then you'll love our Mild Chilies & Cheese Dip Mix. It makes a rich and cheesy queso dip when you just add water and pop it into the microwave for a few minutes.

For something a bit fancier than a bowl of plain queso dip with chips, try this nacho platter.

nachos

1 pkg. regular tortilla chips

1/2 c. black olives, sliced

1 bunch green onions, chopped into small pieces

1 small carton sour cream

2 pkgs. Three Angels Gourmet Co. Mild Chilies and Cheese Dip

Guacamole (optional)

Combine Mild Chilies & Cheese Dip Mix with water according to package directions and microwave for about 1 minute. Let dip cool while you pour the 2 packages of tortilla chips onto a large, decorative platter.

Spice up your life a little with these other ways to serve Mild Chilies & Cheese Dip from the Three Angels Gourmet Co:

1. Simply add water to this mix and microwave for a creamy, but not-too-spicy queso dip just like the restaurants serve. Try it with tortilla chips or fresh veggies for a quick and easy appetizer or snack. Optional: Add cooked ground beef or your favorite ground sausage.

2. For a spicier dip, drain RO-TEL Diced Tomatoes & Green Chilies and add to prepared cheese mix.

3. Drizzle prepared dip over broccoli or your favorite steamed vegetables.

4. Use prepared dip as a topping for eggs, potato dishes or casseroles to give them a little zing.

5. Add prepared dip to rice for a delicious side dish.

6. Combine dip mix with beer or chicken stock to create Spicy Cheese Soup (search this site for recipe in an earlier blog post).

The Twelve Days of Dip Mix Ideas - Day 5

TODAY'S FOOD TIP

>tomatodipmix

Our dip mixes are so versatile. Each one can be used to create a variety of foods besides a dip. Our Sun-Blessed Tomato Herb Dip Mix, for example, can be used to make delicious pizzas. When cut into small wedges, these Herb Veggie Pizzas make perfect holiday appetizers.

DSC03977

HERB VEGGIE PIZZAS

2 prepared pizza crusts (or use a package of Flatout flatbread)
2 Tbsp. Sun-Blessed Tomato Herb Dip Mix
1 (8 oz.) pkg. cream cheese, softened
2 c. assorted chopped vegetables (any combination such as alfalfa sprouts, broccoli, carrots, mushrooms, green or red onions, peppers, tomatoes, zucchini), stir-fried until tender but still crisp
Freshly grated Parmesan cheese

Mix Three Angels Sun-Blessed Tomato Herb Dip Mix with softened cream cheese and put in the refrigerator for at least an hour to let the flavors blend. After an hour, remove cream cheese mixture from the refrigerator and let it soften enough to spread. Spread mixture evenly over the top of pizza crusts.

Arrange chopped, cooked vegetables in an attractive manner over cream cheese herb spread, top with grated Parmesan cheese. Place pizzas in a 350 oven for about 10 minutes. Cut pizzas into wedges and place on a tray. Serve immediately.

The Twelve Days of Dip Mix Ideas - Day 4

TODAY'S FOOD TIP

Make a flavorful bread dipper with olive oil and Sun Blessed Tomato Herb Dip Mix (directions are on the package) from the Three Angels Gourmet Co.

Once you've prepared the bread dipper, sprinkle some into a small bowl, along with a little balsamic vinegar and finely grated parmesan cheese. Dip small pieces of french bread or Italian bread into the bowl. Yum.

You can also use the bread dipper to create a delicious, yet simple, side dish with your favorite pasta (bowtie pasta is great for this but you can use spaghetti, fettuccine, or any kind of pasta), and Parmesan cheese.

oil and pasta

Cook the pasta, then drain it. While the pasta is still hot, drizzle with the prepared bread dipper (olive oil infused with Sun-Blessed Tomato Herb Dip Mix). Stir to distribute the oil evenly throughout the pasta. Grate fresh Parmesan over the pasta and stir it through the pasta until the cheese begins to melt. The tomato-herb olive oil helps the cheese stick to the hot pasta, and the combination of ingredients gives it a wonderful flavor.

The Twelve Days of Dip Mix Ideas - Day 3

These attractive cucumber and salmon appetizers are a snap to make with our Divine Dill Dip Mix. Simply add cream cheese or sour cream to the dip mix.

DSC04358

DILLICIOUS CUCUMBER & SALMON APPETIZERS

1/2 pkg. Divine Dill Dip Mix

1 c. sour cream OR 4 oz. cream cheese

1 large cucumber

1 pkg. (about 3 oz.) smoked salmon

Fresh dill or canned pimento

Combine the sour cream or cream cheese and Divine Dill Dip Mix and refrigerate for at least an hour, so the onions in the dip mix will soften and the flavors will blend with the sour cream or cream cheese.

Slice a large cucumber in half. With a vegetable peeler, peel the length of each cucumber, leaving narrow strips of the peel intact (see photo). Cut the cucumber into 1 to 2 inch slices, then make a little cup out of each piece of cucumber by hollowing out a bit of the cucumber. Put about a teaspoon of the dill dip mixture into the hollow space of each cucumber. Cut a small piece (about 2 inches or so) of smoked salmon and roll it up. Place the rolled salmon on top of the dill dip mixture that is inside the cucumber slice. Garnish with a little minced dill or a small piece of canned pimento. Cover with plastic wrap and chill until ready to serve.

Snouts & Beans: The Perfect Kids' Meal for Halloween!

TODAY'S FOOD TIP

Let’s face it. Kids don’t want "gourmet" food for Halloween. They want something totally "gross" instead.

So tonight, before your kids head out for trick-or-treating or partying, serve them some totally gross "Snouts & Beans." They’ll think you’re the coolest mom on the block.

WARNING: Your husband probably won’t appreciate this meal as much as the kids, so you’ll want to make something else for his dinner tonight.

snout

SNOUTS & BEANS

2 (16 oz.) cans plain baked beans

1 Tbsp. Worchestershire sauce

1/4 c. brown sugar

2 Tbsp. barbecue sauce

1 Tbsp. teriayki sauce

8 beef knockwursts

Empty can of beans into saucepan. Add the sauces and sugar to the beans.

Trim off ends of knockwursts. Slice knockwursts into equal pieces about one inch long, making each cut at the same slight angle. With the tip of a vegetable peeler, carefully hollow out two deep round nostrils on one side of each piece (snout) of knockwurst.

Place snouts in a saucepan and cover them with water. Cook the snouts for about 5 to 10 minutes on medium-high heat. Cook the beans on medium-low, until sauce bubbles and thickens slightly.

Place the snouts on paper towels to drain. Pour the hot beans into serving dish and arrange the drained snouts on top, nostrils up.

Pantry Staples for Quick Cooking

TODAY'S FOOD TIP

507624_seasoning_1

10 Pantry Staples to Make Quick Cooking Taste Like All Day Cooking
By Tracy Alt

Stocking up on often used pantry items when they are on sale is the perfect way to not only save money on item you know will not go to waste but also to ensure that you will have enough ingredients on hand at all times to throw a meal together in a matter of minutes. Here is a list of my top ten pantry items that will help you add that all-day cooked flavor to quick cooking meals.

1. Pasta: Pasta is so versatile that you could make dinner with it every night for a month and never have the same meal twice. Dried pasta is the perfect pantry staple to stock up on every time it goes on sale at your grocery store. Keep different size and shaped noodles on hand to make meals more interesting. Dried pasta can be added to soups, stews or casseroles, it can be used as a bed for your favorite stir-fry, to add some bulk to your meal or it can be the star of the show - a quick go-to meal by simply adding your favorite jarred sauce.

A couple of things to keep in mind when cooking with dried pasta are: Always put your pot of pasta water on the stove before you do anything else to begin preparing your meal. You don't want to have the rest of your meal prepared and getting cold while you are still waiting for the pasta water to boil so give it a head start. Also, if you are serving pasta as the star of the show, topped with your favorite sauce, you should always use a noodle with lines or ridges in it because it will give the sauce a place to go and do not rinse the noodles when you drain them because it will help the sauce stick.

2. Spaghetti Sauce: Of course you can use a jar of spaghetti sauce to pour over spaghetti for a quick meal any night of the week, but think outside the box a little when it comes to this pantry staple. You would be surprised how many different ways spaghetti sauce can be used. The great thing about spaghetti sauce is that all of the cooking has been done and that all-day flavor is already sealed in. There are so many varieties on the store shelves that you can get a sauce with whatever flavor combination you prefer, or you can get a simple marinara sauce and spice it up your own way by adding fresh herbs and vegetables to suit your pallette and your menu.

3. Prepared Broths: Boxes or cans of prepared beef, chicken and vegetable broth are a must have pantry staple. When it comes to quick cooking you should not pass up any opportunity to add flavor. You can do this by substituting broth in place of water to add extra flavor to any recipe. You can even cook your rice in broth instead of water. If you cook often the larger boxes of broth can be stored in the refrigerator after opening so you can use as much or as little as you need and they can sometimes be a better bargain than the cans. If you do wind up with leftover broth in an opened container and are afraid that you will not be able to use it quickly, pour it into ice cube trays and freeze it. You can pop out as many cubes as you need and melt them right into your recipe. You can even get fancy by adding some dried herbs to your broth cubes before freezing for extra flavor.

4. Quick Cooking Rice: Rice is a great way to add bulk to a meal. Serving a stir fry of meat and vegetables over rice makes a delicious and satisfying meal. Rice is also a great way to add some whole grains to your diet by using brown rice or wild rice instead of white rice. Experiment with different flavors and find one that your family enjoys. Rice also makes a great side dish either by itself, with vegetables mixed in or simply topped with your favorite spaghetti sauce.

5. Condensed Soups: Condensed soups are a fabulous way to add both moisture and flavor to quick cooking meals. You will find recipe ideas right on the soup can labels and there have been entire cookbooks written around the theme of cooking with condensed soups. Cream of mushroom, cream of chicken, cream of celery and condensed cheese soup are probably the most popular. Take a close look at the soup selection the next time you are in the grocery store. Read the recipes on the labels and stock up on any that you can incorporate into your weekly menu planning. If nothing else, you can make soup for lunch or dinner on a cold rainy day. Don't forget the chicken noodle in case somebody doesn't feel well.

6. Dried Herbs and Spices: Having a stock of herbs and spices on hand will really help "spice" up your quick meals. Kosher salt, whole black peppercorns (to grind in a pepper grinder), parsley, basil, oregano, rosemary, thyme, cumin, chili powder, mustard powder and paprika would be a great starting point. Unless you cook a lot, buy these items in the smallest quantity possible. Dried herbs and spices can lose their flavor and it is recommended that you should replace them after 6 months. You will wind up wasting money if you buy the jumbo size container of paprika, only use it once or twice and wind up throwing it away.

7. Liquid Condiments: Worcestershire, soy sauce, hot pepper sauce, and an assortment of vinegars are some liquid condiments that can pack a punch when it comes to adding flavor to your quick fix meals.

8. Canned Tomatoes: Having a variety of canned tomato products in your pantry is a great way to add all-day cooked flavor to your meals. You can add variety by mixing up the size of the tomatoes, from whole to finely diced. You can even purchase the cans with herbs and spices already added.

9. Canned Beans: Beans are a great source of fiber and an excellent way to add bulk to your meals, but cooking with dried beans can take a very long time because you typically have to soak them overnight and then cook them for hours until they soften. Canned beans give you the same benefits in a fraction of the time and if you stock up when they are bargain-priced they can be beneficial to your wallet as well.

10. Extra Virgin Olive Oil: Extra virgin olive oil is an absolute cooking staple. Even though oil is a fat, extra virgin olive oil is considered a healthy fat because it contains antioxidants like Vitamin E, it can lower you bad cholesterol while raising your good cholesterol and studies have shown that extra virgin olive oil can actually help prevent heart disease and certain types of cancer. You should keep in mind, though, that even with all of these health benefits, extra virgin olive oil is still a fat and it should be consumed in moderation. Two tablespoons per day should be your limit. There are many varieties of extra virgin olive oil on the market and some can be very expensive. Do a little taste testing to find a moderately priced brand that suits your pallette and watch for it to go on sale.

SUN-BLESSED TOMATO HERB PUFFS

1 box puff pastry

1 pkg. Sun-Blessed Tomato Herb Dip Mix

8 oz. cream cheese, softened

Combine the tomato herb dip mix with the softened cream cheese and put it in the refrigerator for about an hour to blend. After an hour, remove the cream cheese mixture from the refrigerator. Let it soften while you preheat the oven and prepare the pastry.

Preheat the oven to 400 degrees.

Thaw 2 sheets of puff pastry.

When thawed, place one sheet of pastry on a lightly floured boad. Use a rolling pin to roll the dough out until it's a 13-inch square. Spread 1/2 of the cream cheese mixture over the entire surface of one sheet of the puff pastry. Fold the sides of the pastry toward the center - so they go halfway to the middle. Fold them again, this time so the 2 folds meet exactly at the middle of the dough. Then fold one half over the other. Slice the dough into 3/8 inch slices and place them, cut side up, on a baking sheet lined with a silicone baking mat. Repeat this entire procedure with the 2nd sheet of puff pastry.

Place each baking sheet in the oven for 6 minutes. Remove from the oven and turn each pastry slice over. Return baking sheet to the oven and continue baking for an additional 6 to 8 minutes - until each slice of pastry is done and the edges have started to brown.

Roll up each tortilla. Wrap in plastic wrap and refrigerator for at least an hour. After tortillas have chilled, cut each rolled tortilla into small pieces.

apple crumble

HEAVENLY APPLE CRUMBLE

3 medium apples (any kind for baking)

1/2 tsp. powdered cinnamon

1/3 c. water

1 stick butter

1 pkg. Heavenly Jam Bar Mix

Preheat oven to 350 degrees. Peel and core apples. Chop them into bite-sized pieces and set them aside. Spray an 8"x8" baking pan with cooking spray, then line the bottom of the pan with the apple pieces. Pour the water into the pan with the apples, then sprinkle the apples with the cinnamon. Put 1 stick of butter in a microwave safe mixing bowl. Melt the butter in the microwave, then pour the jam bar mix into the melted butter and mix together well (this will make a crumbly mixture). Pour the crumbly mixture over the apples in the baking pan and pat down. Bake at 350 degrees for 30 minutes (or until crumbly mixture is brown around the edges and apples are soft).
Serve the crumble topped with vanilla ice cream, or whipped cream, if desired.
