Herbed Mozzarella

MONDAY'S FOOD TIP

Don't all those herbed cheeses in your local deli or specialty food store look delicious? Did you know you can easily turn plain mozzarella into a luscious herbed cheese yourself? If you happen to have your own herb garden, all you'll need to purchase is the mozzarella. You'll find the other ingredients in your garden and spice cabinet.

HERBED MOZZARELLA

2 c. bite-sized pieces of mozzarella
4 Tbsp. extra virgin olive oil
2 Tbsp. chopped fresh basil
2 Tbsp. chopped fresh parsley
1 Tbsp. chopped fresh oregano
1 bay leaf
Salt and freshly ground pepper (to taste)

Combine all ingredients in a bowl. Mix well. Cover and refrigerate for several hours or overnight.

Remove bay leaf and serve at room temperature with crackers, slices of bread, etc. Makes 8 servings.
