Friday's Food Tip: Holiday Rum Balls

It wouldn't seem like the holidays without at least one recipe for Rum Balls.

It takes a few days for the full flavor of Rum Balls to develop, but, if you make these today, they should be pretty tasty by Christmas afternoon.

You can use the following recipe to make either Rum Balls or Bourbon Balls.


RUM BALLS (or BOURBON BALLS)

1 (6 oz.) pkg. chocolate chips

2 Tbsp. white corn syrup

1/2 c. rum (or bourbon)

2 1/2 c. vanilla wafers, crushed fine

1 c. nuts, chopped fine

1/2 c. powdered sugar or 1/2 c. flaked coconut (for coating the balls)


Melt the chocolate chips in a double boiler or the microwave. Remove from heat; add syrup and rum (or bourbon) and mix well.

Add vanilla wafers and nuts. Mix with your hands and let stand 20 minutes. Shape into balls, then roll in either powdered sugar or flaked coconut.

Store the balls in an airtight container. Let them set for about 3 days to develop flavor.
