Tuesday's Food Tip: Plan a Simple New Year's Day Brunch

If you’ll have overnight guests for New Year’s Eve, make preparations now for a simple New Year’s Day Brunch, then relax and celebrate as you usher in 2006.

Many dishes for your New Year’s Day Brunch can be partially prepared the night before. This breakfast casserole should be refrigerated overnight.

BREAKFAST CASSEROLE (serves 8)

1 lb. breakfast sausage (mild)
6 eggs
4 slices white bread, cubed
2 c. milk
1 c. shredded sharp cheddar cheese

Brown and drain the sausage. Crumble it into a 2 quart casserole sprayed with cooking spray. Beat the eggs. Add milk and bread. Pour mixture over the sausage, then top with cheese.

Refrigerate overnight. The next morning, bake at 350 degrees, covered for 30 minutes. Uncover and bake 15 minutes more.
