Spring is just around the corner. For many lucky people, that means a trip to a sunnier, warmer climate for spring break.
But even if you'll be staying home this spring, you can still get a taste of the tropics. Try this luscious and easy dessert recipe from LIGHT & EASY by Bob Bowersoz. Close you eyes as you eat it and you'll feel as if you're dining in a tropical restaurant on the shore of some exotic island.

BAKED BANANAS WITH COCONUT - Serves 4
5 medium bananas
Vegetable spray
1/3 c. orange juice
1 Tbsp. lemon juice
1 Tbsp. packed brown sugar
2/3 c. shredded coconut
Preheat oven to 375 degrees. Cut the bananas crosswise into halves, then cut each half lengthwise into halves. Coat a 9-inch pie plate or baking dish with vegetable spray. Place the bananas in it and drizzle with the orange and lemon juices. Sprinkle with the brown sugar and coconut. Bake for 8 to 10 minutes, until the coconut is golden.
