Simple Substitutes

WEDNESDAY'S FOOD TIP

Pine_Nuts

If you're allergic to wheat or corn and can't use breadcrumbs or cornmeal to make meatloaf or other foods like salmon croquettes, try these simple substitutes.

For meatloaf, add a little cooked brown rice to the raw meat, to help bind it together the way bread crumbs do.

For salmon croquettes, use a food processor to grind some fresh pine nuts. Throughly drain a can of salmon and pat it dry. Use the ground pine nuts to bind the fish together and form patties (or croquettes). Add other seasonings, then cook as usual.

If you can't find pine nuts in a store near you, order them online.
