Many children don't care for salad, yet salads can be very nutritious as well as delicious. A good way to get children who are reluctant to eat salad is to have them help you make the salad. Children are more likely to eat something new if they make it themselves.
You can let the children help you clean, peel, or cut the ingredients for the salad, or you can simply put out all the prepared ingredients and let the children "build" their own salad. Just be sure you have plenty of "Super" foods available for them to choose from.
What are super foods? These are foods that are higher in nutrients (that fight disease, boost energy, and keep you healthy) for the amount of calories they contain than regular foods.

Here are some Super foods that kids can use to build a Super Salad:
Fresh spinach leaves
Shelled walnut pieces (either sugared or plain)
Fresh raspberries, blueberries, or blackberries
Fresh orange pieces
Grape tomatoes
raw broccoli pieces
Fresh strawberries
Kiwi Fruit
Carrot strips

"A salad should never be just a dish of greens. Every salad should sparkle with flavor, cleanse the palate, and beef up the appetite." - Emeril Lagasse
